March.....how did it come so quickly?! Well it has and here we are wrapping up another wonderful, sunny month in South America. Paraguay is going well, I am learning more about the culture, the food, the traditions of the 'interior' (campo/countryside). The Guarani language is so intricate that I doubt I will pick up more than salutations, my head's a bit full of languages at the moment, but I respect how important it is to communicate without a translator, so hopefully during my travels outside of Asuncion I'll pick up a bit more!

I'm sorta following American politics (plastered everywhere here!) but more interested in what Obama is continuing to do (Cuba what?! Sippin' mate in Argentina? Politely addressing hecklers at a speech? Keep it up!). Honestly I'm more interested in the current political situation in Brazil, as I foresee something similar happening in the US IF (and that's a BIG IF, I mean HUUUGE) if Trump somehow wins.....Anyways, for those Americans out there reading this, look into the Dilma-Lula-Petrobras sitch....very relevant.

Recently I've been experimenting with refrigerator pickled veggies. Currently I have some spicy ginger beets and sweet dill pickles chilling while I'm out and about, but here is my first batch of carrots and cucumbers, they turned out super tasty!


I went to the International Blues Festival hosted in Asuncion. I had no idea blues and jazz are so popular in South America, with bands visiting from all over this continent!

I went to a friend's art exhibition catered with delicious local stew, fried zucchini and yummy desserts! Great to see new art happening in the heart of Asuncion:

Healthy Cooking dishes:

This was my first adventure making pumpkin curry, turned out well with some shaved coconut!

my lil punkin served me well!

I kept the roasted chicken wings on the side so it was vegetarian-friendly! Curry turned out beautifully and we topped it off with lime, basil, chives, and roasted pumpkin seeds. The chicken wings were baked with a simple glaze of honey, spices, and apple cider vinegar...pairs well with BEER!

made my own cake balls for Mayeli's bday! Bake a cake, then crumble it up...mix it with dulce de leite and it tastes and feels like cake batter but it's cooked so safe to eat!

typical Paraguayan stew courtesy of Mayeli's cooking! With a cucumber, lime and parsley juice, mandioc, and one of my shaken salads mmmmmhmmmm good!

Key to healthy living is spicing everything up! So now we have basil, lettuce variety, rugula, and cherry tomatoes growing in recycled containers!

OMG discovered Paraguay has frozen yogurt, GRAPEFRUIT flavored! Yes, I will be coming back :)
